When the day is sh-t and your hair is a gong show and you need like 14 back to back naps to stand up straight, there is only one answer to save the day. Comfort food. For no-nonsense, straight-up good old-fashioned comfort food, there is really nothing like a creamy combination of cheese, noodles and butter. (There is also a nutella, peanut butter & marshmallow fluff grilled sandwich, but that is a whole other CRAZY DELICIOUS ball of wax.)
Gluten free peeps can only reminisce of the childhood days of Kraft Dinner, made on the stovetop in minutes, neon orange powder everywhere, a solid farting squirt of Heinz ketchup swirled through the steaming noodles.
And then there was Amy’s Kitchen Rice Noodles Mac & Cheese. I have only recently consistently found this in Canada and thank GAWD. It is seriously a legit mac & cheese, with tender al dente noodles and a really beautiful creamy cheese sauce. And it’s a microwave meal. TOTES INCREDIBLE.
If I am feeling fancy I will fold in a handful of chopped crispy bacon, green onions and asiago. If I am feeling like me on a Wednesday, I will just gobble this down straight while reading a library book, stretched out on the office couch (aka greatest idea ever).
Recommended for an easy peasy, cold weather work lunch.
Best served with a small spoon so you don’t slam it down in three bites.

*As noted by some fellow celiacs on Twitter, Amy’s does have a disclaimer on their packaging that all food is processed in a facility that contains wheat.
